Leeks with tomatoes and olives, with provence style herbs

Recipe Ingredients for Provance style leeks with tomato

570 g leeks
300 g tomato
2 tbsp olive oil
100 g olives

Recipe Directions for Provance style leeks with tomato

  1. Slice the leeks thinly. Peel the tomatoes, cut them into chunks. Finely dice the olives.

  2. Heat the olive oil. Add the leeks and let them cook for about 10 mins, stirring frequently. Add about 50 ml water or as needed, and keep cooking.

  3. When the leeks are soft, add the tomatoes and olives and keep cooking. Add salt, pepper, thyme, origan to taste.
