4 serving Proti Pasta Fusilli
16 oz Fresh Boneless Skinless Chicken Breasts
1 eggplant, peeled (yield from 1-1/4 lb) Eggplant
1 tomato Tomatoes, Red, Ripe
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
8 oz Mushrooms
3 serving Artichokes Hearts
2 serving Minced In Oil Garlic
630 cal Spaghetti Sauce
1 cup, chopped Onions

  1. 1tsp evoo

  2. cut eggplant in to bite size pieces

  3. chop onion

  4. sautee together

  5. add bite size piece of chicken breast

  6. add garlic

  7. add tomato,pepper, mushrooms,artichokes

  8. add pasta sauce and let blend

  9. cook the fusilli drain and top with above
