Recipe Ingredients for Protein-Vegetable Pancakes

250 grams Old Fashioned Quaker Oats
10 medium Egg, Whole
3 cup (1" cubes) Eggplant
1 packet Stevia
1 scoop Whey Protein Powder
3 tbsp Cocoa, Dry Powder, Unsweetened
2 fl oz Dark Amber Maple Syrup
6 small (6" to 6-7/8" long) Bananas

Recipe Directions for Protein-Vegetable Pancakes

  1. Mix oats, eggs, stevia and steamed eggplant in a blender until smooth.

  2. Cook in a non-stick pancake pan. No oil is needed!!!

  3. When you see bubbles flip pancake and fry until done.

  4. Makes about 12 pancakes (one serving is 2 pancakes).

  5. Slice 1/2 banana on the pancake.

  6. Add 1 teaspoon maple syrup.

  7. Sprinkle Vanilla flavored whey protein powder and cocoa on top.

  8. Enjoy!
