Better than pumpkin pie, and much healthier!

Recipe Ingredients for Protein Pumpkin Pie Bars

1/2 cup oats
1 cup whole wheat flour
1/4 cup brown sugar
1/2 cup unsweetened applesauce
15 ounces pumpkin
2 cups skim milk
1 1/2 teaspoons cinnamon
3 egg whites
50 grams whey protein

Recipe Directions for Protein Pumpkin Pie Bars

  1. Combine oats, flour, brown sugar and applesauce. Mix thoroughly and kneed dough-like. Spray bottom and sides of 9x13 baking pan, press oat mixture into pan, spreading until bottom of pan is covered. Bake at 350 degrees for 12 minutes.

  2. Combine milk, pumpkin, cinnamon, egg whites, protein powder, and small amount of stevia (if sweetening is desired). Mix well. When crust mixture is baked, pour this mixture on top, bake at 350 degrees for an additional 20-25 minutes until filling is firm to touch in center. Cool before serving. Store in the refrigerator!
