Delicious protein pancakes. Can be wrapped and put in the fridge or freezer and reheated the next day in microwave or toaster.

Recipe Ingredients for Protein Pumpkin Pancakes

0.5 cup Pumpkin
3 large Egg, White
0.25 cup (8 fl oz) Water
1 cup dry Old Fashioned Quaker Oats
1 level scoop Nectar Sweetes
4 packet SPLENDA No Calorie
1 tsp Baking Powder
1 tsp Cinnamon, Ground
1 tsp Vanilla Extract
0.5 tsp Salt, Table
0.1 tsp Nutmeg

Recipe Directions for Protein Pumpkin Pancakes

  1. Grind oats to a fine powder in a food processer.

  2. Add all ingredients in a bowl except water and whisk with a wire whisk.

  3. Add water and whisk some more until blended.

  4. Use a large spoon to drop mixture into 3-4 inch circles onto medium heated skillet coated with non-stick

  5. spray.

  6. Heat about 3-4 min on each side. Check with spatula to see if they are slightly browned and ready to be turned as they will not bubble like regular pancakes.
