Add: 1/2 cup chopped dried apricots (160 calories total) 1/4 cup roasted pistachio nuts (180 calories total)

Recipe Ingredients for Protein pilaf

1/2 cup amaranth
1/2 cup quinoa
1/2 cup millet
1 tbs canola oil

Recipe Directions for Protein pilaf

  1. Heat canola oil in low heat.

  2. Add all grains. Stir all together with oil for about one minute. Add 3 cups of water or vegetable stock. Bring to boil and lower to lowest flame.

  3. In the meantime roast the pistachios 5-7 minutes.

  4. Chop dry apricots and add them to the grains.

  5. Add kosher salt and pepper.

  6. Once the liquids are absorbed add part of the pistachios and mix.

  7. To serve garnish with pistachios.
