Makes 6 pancakes. Each serving (3 pancakes) is 4 PointsPlus

Recipe Ingredients for Protein Pancakes

1/2 cup old fashioned oats
1/2 cup cottage cheese ( I used 4% fat)
1/2 cup liquid egg whites
1/2 tsp. vanilla extract
1/2 tsp. baking powder
1/2 tsp. cinnamon
1 dash salt

Recipe Directions for Protein Pancakes

  1. Place ingredients in blender.

  2. Blend until smooth.

  3. Let batter rest for about 5 minutes (*helps make a fluffier pancake*).

  4. Heat large nonstick skillet over medium high heat. Coat with cooking spray, then using 1/4 cup measure, pour batter into skillet making pancakes about 4 inches in diameter.

  5. Cook until golden and flip.
