For when you don't want another shake

Recipe Ingredients for Protein Pancakes

30 g oatmeal
20 g protein powder
1/2 tsp baking powder
63 g egg beaters
28 g frozen blueberries

Recipe Directions for Protein Pancakes

  1. Whizz oatmeal in blender to a flour-like consistency.

  2. Mix dry ingredients together. Mix in egg whites, then blueberries. If you use frozen blueberries you likely won't need to add water. If you use fresh fruit (or no fruit) you may need to thin it slightly.

  3. Heat a non-stick pan over medium-high heat. Cook as you would pancakes, turning when bubbles are breaking and top is starting to dry.

  4. Serve with topping of choice. I take 1Tb of whatever homemade jam is around and thin it down with water, warming in microwave.
