Recipe Ingredients for Protein Pancakes - Basic & Plain

4 egg whites
1/4 cup oatmeal
1/4 tsp vanilla extract
1 oz almond milk unsweetened

Recipe Directions for Protein Pancakes - Basic & Plain

  1. (1) Beat egg whites until fluffy (soft peaks).

  2. (2) Add stevia powder and vanilla.

  3. (3) Add oatmeal, unsweetened almond milk and cinnamon (optional).

  4. (4) Heat non-stick skillet on medium-high.

  5. (5) Spray olive oil or non-stick spray if needed/desired.

  6. (6) Ladle batter into the pan. Use the ladle to spread batter evenly in pan if it is too thick to move when tilting the pan.

  7. (7) Cook first side 1-2 minutes until golden underneath. Flip the pancake over.

  8. (8) Cook second side until golden (about 1-2 minutes).

  9. (9) Serve with your favourite fruit. Defrosted strawberries work great because they become mushy and juicy once at room temperature. I make a bunch and stick some in the freezer moving it to the fridge the night before I plan to eat it. Heat it up in the microwave in the morning.
