Makes 6 regular muffins, or 3-4 large, or 10-12 mini.

Recipe Ingredients for Protein Muffins - Oatmeal, Nuts, Chopped Fruit, and Chocolate

1/2 cup oats
1/2 cup liquid egg whites
1/8 cup Splenda brown sugar
2 T ground flax seeds
2 T wheat bran
1 T chopped dried apricots
1 T craisins
2 T chopped walnuts
2 T semi sweet chocolate chips
1/2 tsp of baking powder

Recipe Directions for Protein Muffins - Oatmeal, Nuts, Chopped Fruit, and Chocolate

  1. Preheat oven to 350 F

  2. Combine all ingredients in a mixing bowl.

  3. Coat muffin tin with cooking spray.

  4. Divide mixture evenly among muffin cups (make sure to include all liquids).

  5. Cook for 12-15 minutes.

  6. Enjoy before or after a workout!
