I use Betty Crocker gluten free mix and add healthy ingredients. It is a healthier meal than it appears, considering the belly fat burning skin-toning dark chocolate, the healthy Omega 3s, fiber, protein and carbohydrates for breakfast or post-workout. It's so delicious it helps me stick to my diet. The recipe makes 48 cookies and the serving size calculated is 2 cookies - great day starter with a protein shake..

Recipe Ingredients for Protein and fiber rich gluten free-chocolate chip cookies

1 cup almonds, chopped
1/2 cup sugar
1 cup brown rice flour
3 tbsp coconut oil
6 oz unsweetened chocolate (chips, 70%)
8 eggs
1 tsp vanilla
2/3 cup flaxseed meal
400 g Whey protein isolate

Recipe Directions for Protein and fiber rich gluten free-chocolate chip cookies

  1. Cook as directed on package, adding or reducing extra ingredients at the end.

  2. The rice flour, sugar and 2 oz of the dark chocolate are an approximation of the Betty Crocker gluten-free chocolate chip cookie mix I use, as there is little else in it. It rises perfectly and is much easier than from scratch, although soon I will try a from-scratch chick pea flour version.

  3. The almonds should be chopped, a task easy enough to do by hand, while a food processor makes more of an almond meal. They say almond chopping is a stress reducer so enjoy.

  4. Purchase 70% dark chocolate chips at whole foods, 12 oz for 3.99. It's the least expensive I could find them.
