A dense cookie where the texture is almost more like... fruit cake?

Recipe Ingredients for Protein Cookies

1/2 cup of butter
1 cup of brown sugar
2 eggs
1 teaspoon of vanilla extract
1.33 cup of dates
2 small apples
2 cups of whole wheat flour
135 g soy protein powder
1 teaspoon of baking powder

Recipe Directions for Protein Cookies

  1. Soak dates for 10 minutes in hot water, or until soft, then puree.

  2. Cream sugar and butter.

  3. Add eggs, vanilla extract, pureed dates and 2 small grated apples.

  4. Add flour, soy protein and baking powder (meant to be baking soda but I only had baking powder so I don't know how different they will turn out with baking soda).

  5. Combine.

  6. Roll into small balls and place on a cookie sheet.

  7. Press with a fork and bake at 190c for 10-15 minutes, or until slightly brown.
