Description: These cookies are soft, yet chewy. For more of a granola texture, add extra nuts and slightly less whole wheat flour.

Recipe Ingredients for Protein Cookie

1/2 cup splenda
1/4 cup white beans
2/3 cup flax meal
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon, ground
3 large egg whites, beaten
1 tsp vanilla extract
1 cup rolled oats
1/4 cup apple sauce
1/4 cup chopped nuts

Recipe Directions for Protein Cookie

  1. How To Prepare: Preheat oven to 350. Grease a large cookie sheet. In a medium bowl, stir together

  2. sugar substitute and and mashed beans and apple sauce until creamed and incorporated.

  3. Sift together the flax meal, baking powder, salt, and cinnamon; stir into the

  4. bean-sugar mixture. Add egg, vanilla extract, rolled oats, and chopped nuts; stir until combined.

  5. Drop by rounded teaspoonfuls onto greased cookie sheet. Bake for 10-12 minutes or

  6. until golden. Allow cookies to cool slightly. Yield: 20-24 Servings.

  7. Amount per serving: Calories 72.06, Total Fat 3.41 g, Saturated Fat 1.4 g,
