This meatloaf goes together quickly on those busy days and is considered comfort food. There is no need to add salt or pepper, the spices in the salsa and bread crumbs should be sufficient.

Recipe Ingredients for Protein Chicken Loaf

1 pound ground chicken
1/2 cup onion, diced
1/2 cup italian bread crumbs
1/4 cup mild salsa
1 egg

Recipe Directions for Protein Chicken Loaf

  1. Preheat oven to 350 degrees F.

  2. In a large bowl mix egg, bread crumbs, onion and salsa.

  3. Add ground chicken to above mixture and blend together well.

  4. Place the mixed ingredients into a 9"x5"x3" loaf pan sprayed with olive oil.

  5. Bake for about 50 minutes or until internal temperature reaches 180 degrees F.

  6. Let stand for about 5 minutes before serving.
