Healthy Cheesecake Cupcakes with Fruit and Protein

Recipe Ingredients for Protein Cheesecake

3 oz Creamy Cheese Fat Free
16 oz Yogurt
1 envelope Gelatine
2 tsp Vanilla Extract, Imitation, No Alcohol
12 packet Stevia
1 cup Mixed Berries
1 scoop Whey Protein
70 cal Milk, Reduced Fat, Fluid, 2% Milkfat

Recipe Directions for Protein Cheesecake

  1. Combine Vanilla Extract, Stevia, and Gelatine together with 1/2 cup boiling water

  2. In a blender, combine yogurt and cream cheese. Pour gelatine mix over and blend until smooth

  3. Fill 18 foil cupcake liners and refrigerate

  4. Next defrost the berries for a minute or so

  5. Combine 1 scoop of whey protein with 1/2 cup milk

  6. Blend berries and protein together until smooth and fluffy.

  7. Top cheesecake with berry mixture and freeze
