Scarsdale Diet Protein Bread With Hemp Seeds. (Toasting makes the bread easier to eat as the dense bread can be a bit dry and chewy)

Recipe Ingredients for Protein Bread

1 cup warm water
1 tbsp dry yeast
1/2 tsp salt
1 tsp sugar
1/2 tsp apple cider vinegar
1/2 cup soy flour
1/4 cup Vital Gluten Flour
1 1/2 cups whole wheat flour
4 tbsp Hulled Hemp Seed

Recipe Directions for Protein Bread

  1. Place water in a medium bowl. Sprinkle dry yeast into bowl and let stand until yeast dissolves (approx. 5 minutes) Add salt, sugar and vinegar to bowl and mix.

  2. Sift soy and gluten flours together. Slowly add to the yeast mixture. Sift whole wheat flour and add it to the mixture. Add the hemp seeds.

  3. Turn mixture slowly until dough sticks together (and not to the sides of the bowl). If you have a mixer or food processor that has dough hooks, these help tremendously.

  4. Lightly flour a board or other surface. Scoop dough into ball with floured hands and place on surface. Knead for five minutes until dough is smooth and elastic. Place into small bread pad that had been sprayed with nonstick spray. Adjust dough to fit shape of pan (load shape). Do not try to touch dough all the way to sides of pan. Cover with slightly dampened towel and set in a warm place (free from drafts) to rise. Let rise for 2 - 3 hours until dough has at least doubled in size and reaches the top of the bread pan.

  5. Preheat oven to 325 degrees. Bake bread in preheated oven for one hour or until light golden brown.

  6. This bread is denser than regular bread so cut into thin slices. Keep unused portion in refrigerator or freezer to be used as needed.
