Recipe Ingredients for Protein Bars

4 oz soy protein powder
2 1/4 oz oat bran
2 3/4 oz whole wheat flour
3/4 oz wheat germ
1/2 tsp. kosher salt
3 oz raisins
2 1/2 oz dried cherries
3 oz dried blueberries
2 1/2 oz dried apricots
12 3/10 oz Mori-nu, Tofu, Silken, Soft
1/2 c Apple Juice Unfiltered 100% Pure
4 oz dark brown sugar, packed
4 egg whites, beaten
2/3 c natural peanut butter

Recipe Directions for Protein Bars

  1. Line the bottom of a 13x9" glass baking dish with parhmentpaper nd lightly coat with canola oil. Set aside. Preheat oven to 350 degrees.

  2. In a large mixing bowl, combine the protein powder, oat bran, wheat flour, wheat germ and salt. Set aside.

  3. Coarsely chop the raisins, dried cherries, dried blueberries and apricots and place in a small bowl. Set aside.

  4. In a 3rd mixing bowl, whisk the tofu until smooth. Add the apple juice, brown sugar, eggs and peanut butter, one at a time and whisk to combine after each addition. Ad this to the protein powder mixture and stir well. Fold in the dried fruit. Spread evenly in the prepared baking dish and bake for 35 min or until internal temp. reaches 205 dgrees. Remove from oven and cool completely before cutting into squares. Store in airtight container for up to a week.
