Homemade Protein Bars from Alton Brown

Recipe Ingredients for Protein Bars

4 ounces powdered soy protein concentrate
2 1/4 ounces oat bran,
2 3/4 ounces whole wheat flour
3/4 ounce wheat germ,
1/2 teaspoon kosher salt
3 ounces raisins
2 1/2 ounces dried cherries
3 ounces dried blueberries
2 1/2 ounces dried apricots
12 3/10 ounces soft silken tofu
1/2 cup apple juice, unfiltered
4 ounces dark brown sugar
2 large eggs, beaten
0.66 cup natural-style peanut butter

Recipe Directions for Protein Bars

  1. Preheat oven to 350

  2. In a glass casserole dish, put parchment paper down and smear with canola oil

  3. Combine/whisk all liquid ingredients

  4. Combine all dry ingredients, except for fruit

  5. Mix dry and liquid ingredients together, when completely mixed, add the fruit in

  6. Put in the casserole dish and smooth to an even layer

  7. Bake about 45 minutes, or until the temperature of the middle is about 200 degrees
