Recipe Ingredients for Protein-banana pancakes

1 cup oatmeal
1 cup egg whites
1 cup low-fat cottage cheese
1 banana
1 tsp vanilla

Recipe Directions for Protein-banana pancakes

  1. Mix all ingredients well in a blender. Allow to rest 5-10 minutes (will give you fluffier pancakes).

  2. Pre-heat non-stick frying pan on medium heat. Using a large spoon, form 4 3-inch pancakes in pan. Cook on first side until bubbles form on top side. Flip; cook approx 60-90 seconds more.

  3. Extras can be refrigerated and reheated in a toaster oven set on "toast".
