Recipe Ingredients for Progresso Skillet Chicken Parmigiana

1/4 cup olive oil
1 cup chopped onions
2 cloves garlic, finely minced
28 oz crushed tomatoes
2 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon pepper
8 oz boneless, skinless chicken breasts
1/3 cup Italian bread crumbs
1/3 cup grated parmesan cheese
1/2 cup shredded mozzarella cheese
2 tablespoons grated parmesan cheese

Recipe Directions for Progresso Skillet Chicken Parmigiana

  1. In 3-quart saucepan, heat 2 tablespoons of the oil over medium heat. Cook onions and garlic in oil for 2 min, stirring occasionally.

  2. Stir in tomatoes, sugar, salt and pepper. Heat to boiling, stirring occasionally.

  3. Reduce heat, cover and simmer, stirring occasionally

  4. Flatten chicken between sheets of waxed paper, flatten chicken to 1/4 inch thickness.

  5. In shallow dish, mix bread crumbs and 1/3 cup parmesan cheese. Dip chicken into egg, then coat w/bread crumb mixture.

  6. In 12-inch skillet, heat remaining oil over medium heat. Cook chicken in oil 10 to 15 minutes, turning once, until no longer pink in center. Pour tomato sauce around chicken in skillet

  7. Sprinkle mozzarella cheese over chicken, cover and heat until melted. Sprinkle with parmesan cheese just before serving
