Great variation to regular meatballs and easy to prepare.

Recipe Ingredients for Procupine Meatballs

1 1/4 lbs lean ground beef
3/4 cup instant brown rice
1/2 cup red onion
1/3 cup skim milk
1 T parsley
1/2 tsp salt
1/4 tsp pepper
2 cups tomato juice
1/2 tsp salt
1/4 tsp pepper
2 T sugar

Recipe Directions for Procupine Meatballs

  1. Preheat oven to 350 degrees.

  2. Mix first 7 ingredients together.

  3. Roll into 2-3 inch balls.

  4. Put in 9x13 greased pan.

  5. Mix last four ingredients and pour over meatballs.

  6. Bake for 50-60 minutes.
