I'm not sure if the unbleached white flour is Prism friendly. I will try it with whole wheat flour and see what happens.

Recipe Ingredients for Prism Friendly Carrot Cake

2 cups carrots, finely grated (3 large)
2 ounces orange juice (Juice from one large orange)
2 t. vanilla
1/4 c. light olive oil
1 cup honey, liquefied in microwave for 30 seconds
1/2 cup crushed pineapple, drained
1 cup unbleached white flour
1 1/2 cups whole-wheat pastry flour
2 t. baking soda
1 t. cinnamon
1/2 t. allspice
3/4 c. walnuts, chopped

Recipe Directions for Prism Friendly Carrot Cake

  1. Preheat oven to 350 degrees.

  2. Stir together carrots, orange juice, vanilla, olive oil, honey, and pineapple until well blended.

  3. In another bowl, stir together the flours, baking soda, and spices.

  4. Mix in walnuts.

  5. Blend the dry ingredients into the carrot mixture, stirring until just mixed.

  6. Pour the batter into a nonstick 8-inch square baking pan and bake for 45-60 minutes until a knife inserted in the center comes out clean.

  7. Remove from oven, let cool slightly and remove from pan.
