Recipe Ingredients for Primi Piatti - Apollogeorgia (1 large pasta bowl)

130 g Boneless chicken breasts
30 g Butter
20 ml virgin olive oil
30 g cheddar cheese
120 ml Cream
70 ml Dry white wine
1 tbs Parmesan cheese grated
1 red pepper (large)
1 tomato (large)
150 g spaghetti

Recipe Directions for Primi Piatti - Apollogeorgia (1 large pasta bowl)

  1. Cut the chicken breast into 3 lengthwise.

  2. With meat mallet flatten breasts between 2 sheets plastic wrap.

  3. In a pan over medium heat sauté the chicken breasts in the butter and the oil 1 minute each side.

  4. Add the garlic and white wine. Let the wine evaporate almost completely.

  5. Add the cream, blue cheese and broccoli. Season with salt and pepper.

  6. Cook over very low heat until the sauce in the desired consistency. Add the parmesan and the pasta to the pan and toss well together.

  7. Serve immediately.
