Excellent, high nutrition vegetable Pimevara Sauce. Excellent over Spagehtti Squash.

Recipe Ingredients for Primevara Sauce

1 T Olive Oil
1 onion chopped
2 T chopped garlic
2 carrots
2 stalks celery
1 1/2 cup broccoli
1/2 cup mushrooms
12 oz evaporated skim milk
2 egg yolks
1/4 cup parmesean cheese
1/4 t tabasco sauce

Recipe Directions for Primevara Sauce

  1. Cook Onion, garlic, carrots and celery in olive oil until almost soft

  2. Add broccoli and mushrooms to cook slightly. Add a very small amount of water to de-glaze pan and speed up cooking if desired

  3. beat eggs and add skim milk to them

  4. Add egg mixture to vegie mixture ove ow heat.

  5. Stir unitl thickened

  6. Add parmesean cheese.

  7. Season with tabaco and/or black pepper.
