Recipe Ingredients for Primavera orzo

2 tbsp. olive oil
1 cup carrots, grated
1 small zucchini, chopped
1/4 small onion, chopped
2 cloves garlic, chopped
3 cups vegetable broth
1 tsp. curry powder
1 cup orzo, dry
1 cup peas, frozen
1/2 cup parmesan, grated

Recipe Directions for Primavera orzo

  1. Heat oil over medium high heat in a large skillet. Sautee the carrots, zucchini, onion, and garlic for 5 minutes.

  2. Add broth and curry. When mixture starts boiling, add orzo. Cover the skillet and bring heat down to medium. Simmer 10 minutes, stirring occasionally, until orzo is tender.

  3. Stir in peas and parmesan, and salt & pepper to taste.
