Minestrone is a classic favorite soup, but this recipe shakes things up a bit with lentils and brown rice.

Recipe Ingredients for Pressure Cooker Minestrone with Lentils and Brown Rice

2 tbsp. extra-virgin olive oil
1 onion, chopped
5 garlic cloves, chopped
6 cups vegetable broth
14 ounce diced tomatoes, undrained
1/3 cup uncooked brown rice
1/3 cup dried lentils
1 1/2 cups green cabbage, chopped
3 medium carrots, peeled diced
2 celery stalks, chopped
1 zucchini, quartered lengthwise and diced
1/2 cup fresh basil, choped
1/2 tsp. fresh thyme leaves
2 tsp. kosher salt

Recipe Directions for Pressure Cooker Minestrone with Lentils and Brown Rice

  1. Heat oil in a large pressure cooker over medium heat. Add onions, garlic and celery. Saute until onion is transparent and tender, about 3 minutes.

  2. Set aside zucchini, it will be added at the end. Stir in the broth, canned tomatoes, brown rice, lentils, cabbage, carrots, celery, basil, thyme and salt. Secure the lid and bring the pressure cooker to high pressure.

  3. When high pressure has been reached, turn the heat to low and set a timer for 20 minutes.

  4. When the cooking time is up, turn off the heat and release the pressure, following the manufacturer's instructions. Carefully remove the lid.

  5. Add zucchini and continue simmering, uncovered, until the soup is thick but still fairly fluid and zucchini is tender (7-10 minutes). Adjust the seasonings to taste.
