hearty vegan soup; very satisfying.

Recipe Ingredients for Pressure Cooker Lentil Soup

1 cup lentils
1 1/2 cups carrots
1 1/2 cups celery
1 medium onion
2 tablespoons olive oil
1 bouillon cube
8 cups water
1/2 teaspoon black pepper

Recipe Directions for Pressure Cooker Lentil Soup

  1. wash and rinse lentils

  2. dice all vegetables

  3. (for a safer recipe, use bouillon without MSG)

  4. add all ingredients to pressure cooker

  5. seal the top of pressure cooker and add weighted pressure regulator

  6. cook on medium high heat

  7. cook for 5-7 minutes once regulator jiggles

  8. turn off heat and leave on burner until the pressure relief pin drops down

  9. (for faster recipe, cook for 10 minutes and cool pressure cooker under running stream of water)

  10. if you don't have a pressure cooker, cook on stove for 30-45 minutes until lentils are tender

  11. 1 serving for a soup course, 2 servings for a main dish
