This is a recipe given to me by a Calorie Count supporter when they found out I was learning to use a pressure cooker. This is my best interpretation the instructions and recipe they sent me and a description of my experience when I tried the recipe.

  1. 1st step

  2. dice the onions

  3. slice the carrots

  4. slice the celery

  5. Coat a pan with extra virgin olive oil and saute the following until the veggies are a little soft. Add the above veggies into the pan, add 1 cup of water, add an envelope of chicken bouillon. Saute the veggies on medium. Remove from heat and set aside for later.

  6. Step 2:

Quater remaining carots, 2 stalks ov cerlery with the leaves, one onion, bay leafs, 1 tsp tyhme, parsley, 1 tsp pountly dseasoning, spingle chicken bouillon over the chicken and veggies in the pot, spinkle on thepepper, place chicken breast side down in pot and add water 2/3's of the way up the chicken or to the recommended fill line on pot. Cover the cooker. Seal it up tight. Put the vent on SEAL. Set on HIGH for 25 minutes.

  8. Now here's where I got nervous, as a person who had never done this before. The cooker got cooking and after some time, steam started to be released from the cooker. ONe of the things I've learned is that the time doesn't start to tick down until the unit gets up to temperature/pressure. Well, that never happened. After one hour and fourty-five minutes the cooker just stopped and the time went to zero. Oh, boy. What was I going to find inside that cooker.

  9. What I found was a completely succulent tasty chicken with the meat falling off the bone. The water was completely gone. The cooker has blown off all the steam. The meat was delicious, so I stripped off the skin and bone and set the meat aside to combine with the rest of the ingredients.

  10. I combined the meat with the vegetables in the pot I set aside and poured in the chicken bouillon. I also added some water and brought it all up to a boil and then let is simmer for an hour.

  11. The result was a very healthy chicken veggie extravaganza. I don't know if you could call it soup, more like a chicken stew.

  12. I think it needs more seasoning. I'll try it again. I think I'm going to cook up some beans and add it to the mix. Rice or noodles with work, too.
