Makes 6 servings



Heat oil in pressure cooker. Add onion and garlic and saute for 3 minutes. Add broth, carrots, dill, lemon juice, salt, pepper, and bay leaf. Secure lid. Over high heat, develop steam to high pressure; reduce heat to maintain pressure and cook 8 minutes. Remove from heat. Combine sour cream and flour. Release pressure. Remove lid and discard bay leaf. Process in blender, then pour back into pressure cooker. Gradually stir in sour cream paste and simmer one minute, stirring continually.

1/4 cup low fat sour cream
1 tsp. flour
3 tbsp. olive oil
1 onion, chopped
1 garlic clove, crushed
3 cups chicken broth
1 1/4 pound carrots
1 1/2 tsp. dried dill
1 tbsp. lemon juice
3/4 tsp. salt
1/4 tsp. white pepper
1/2 tbsp bay leaf

  3. Secure lid. Bring to full pressure over high heat.

  4. Reduce heat and cook for 8 minutes. Mix sour cream and flour together.

  5. Remove from heat and release pressure. Pour into blender and process until smooth.

  6. Turn burner back on; pour puree back into pressure cooker. Gradually stir in sour cream paste and simmer 1 minute, stirring constantly.
