Makes 3 servings



Scramble up 4 eggs per burrito. Store in fridge for up to 3 days, freeze for 1 month.

Recipe Ingredients for Premade Breakfast Burrito

1 egg
3 egg whites
2 oz shredded cheddar cheese
1 flour tortilla
1 tbsp diced scallions
1 tbsp salsa
1 tbsp plain nonfat yogurt
1 tbsp 2% milk

Recipe Directions for Premade Breakfast Burrito

  1. Warm the tortilla in the oven on low.

  2. Meanwhile, scramble eggs with milk and a pinch of salt, then cook over med low.

  3. Lay out the warm tortilla and sprinkle with 2 oz of cheese and the diced scallions.

  4. Lay eggs over the cheese and roll into a burrito shape (make sure the tortilla is warm).

  5. To eat immediately, microwave for 30 s on high.

  6. To save for later, wrap each in plastic wrap and store in a plastic bagm then refridgerate for 3 days or freeze for 1 month.

  7. Heat 1 minute from fridge and 1:30 from freezer or till heated through.

  8. Serve with 2 tbsp plain yogurt and 2 tbsp salsa or hot sauce as you please.
