Prawns with courgettes, tomato and coriander

Recipe Ingredients for Prawns with Courgettes

100 grams Prawns
320 grams Squash, Summer, Zucchini, Includes Skin
100 grams Passata Italian Sauce
3 oz Coriander
4 clove Garlic

Recipe Directions for Prawns with Courgettes

chop the courgetter into prawn sized pieces, sprinkle with salt and put in a colander over a bowl for at least 20 mins. Finely chop the garlic and add to a mdium pan with 1.5 tsp of ground cumin, 1/2 tsp turmeric, 1 tsp finely grated fresh ginger, one finely chopped green chilli, inely chopped corinader, passata, 1/2 tsp cayenne pepper, and juice of a lemon, stir and cook for a few minutes, add salt to taste. Add prawns and warm through. Serve with rice or potaoes
