The catfish I use is labelled "basa fillet". It is similar to chilean sea bass. I just chop the catfish into 1" cubes while it's still frozen and just chuck it in the broth. The prawns I buy are pre-cooked, frozen, and with tails on. I just just chuck them in to heat thru after the catfish.

Recipe Ingredients for Prawn & Catfish Chowder (tomato based)

4 cloves garlic, minced
1/2 medium white onion, diced
3 stalks celery, sliced
3 carrots, chopped
1 large potato, peeled and diced
1 tsp dried thyme
1/8 tsp cayenne
1/2 tsp black pepper
28 fl oz diced tomatoes
14 oz water
5 oz prawns, frozen cooked
10 oz catfish fillet, frozen diced
