Topping is made of Brown Sugar, Honey, Butter and Vanilla Extract Make four flaxseed eggs by putting 4 tbs. Ground flaxseed meal mixed with 8 tbs. water. heat for 15 secs. in microwave then mix until an egg-like consistency forms. Let cool to room temperature, then add into recipe like regular eggs.

Recipe Ingredients for Praline Crunch Pumpkin Date Bread with Vanilla Icing

1 2/3 cup Sugars, Granulated
2/3 cup Coconut Oil
3 grams 100% Pure Vanilla Extract
4 tbsp Organic Flax Seed Meal
15 oz Pumpkin
3 cup All Purpose Flour
2 tsp Pure Baking Soda
2 tsp Cinnamon, Ground
1 serving Sea Salt
1/2 tsp Baking Powder
1 tsp Nutmeg, Ground
1 serving Ground Ginger Spice
1 cup, pitted, chopped Dates, Domestic, Natural And Dry
1/3 cup, packed Sugars, Brown
1 tbsp Unsalted Whipped Butter
1 tbsp Honey, Strained Or Extracted
1 cup Powdered Sugar
1 dash Salt, Table
1 tsp Vanilla Extract
1 tbsp Unsalted Whipped Butter

Recipe Directions for Praline Crunch Pumpkin Date Bread with Vanilla Icing

  1. Heat oven to 350.

  2. Grease bottoms only of 2 loaf pans, 9x5x3 or 8 1/2x 4 1/2x 2 1/2 inches.

  3. Make Praline topping by mixing all ingredients until crumbly and set aside.

  4. Mix sugar, oil, vanilla, eggs and pumpkin in large bowl.

  5. Stir in remaining ingredients except dates.

  6. Stir in dates.

  7. Pour batter into pans.

  8. Sprinkle with topping.

  9. Bake 50 to 60 minutes or until toothpick inserted in center comes out clean.

  10. Cool 10 minutes.

  11. Loosen sides of loaves from pans; remove from pans to wire rack.

  12. Cool completely before slicing.

  13. Wrap tightly and store at room temperature up to 4 days or refrigerate up to 10 days.
