Wonderful salad recipe from my dear friend CZ.

Recipe Ingredients for PP-CZ - Mango Chickpea Salad

2 mangoes (diced)
2 celery stalks (diced)
1/2 Red peppers (diced)
1/2 Yellow peppers (diced)
1/2 Orange Hothouse Bell Pepper
2 scallions (diced)
12 cherry tomatoes (half)
15 1/2 oz. chickpeas (rinse)
15 1/2 oz. black beans (rinse)
1/2 cup cilantro (chopped)
3 pressed clove garlic
2 tablespoon extra virgin olive oil
2 tablespoon lime juice
1 salt and pepper to taste

Recipe Directions for PP-CZ - Mango Chickpea Salad

  1. Chop and mix in a large bowl.

  2. Mix Garlic, Lime Juice and Olive Oil. Then drizzle and mix into the salad.

  3. Serve as a side dish or for lunch.
