Vegan Pozole Recipe - low fat

Recipe Ingredients for Pozole -Vegan

4 cups hominy
2 cups garbanzo beans
1 cup onions
2 tbsp garlic
28 oz tomatoe
1 lb tomatillo
2 cups zucchini
32 oz vegetable broth
2 tsp oregano
1 tsp thyme
1 tsp cumin
1 cup bell pepper

Recipe Directions for Pozole -Vegan

  1. 1. Soak the New Mexico red chile pods for about a ˝ hr in hot water, then seed & stem the chile pepper pods. Using gloves is a good idea, or use a plastic bag to handle the chile over your hands. Chop up the chiles and put about 1/2 cup of water in a blender and blend.

  2. 2. Heat 4 tbsp water in a frying pan on medium-high heat, and sauté onion, garlic, yellow squash, zucchini, and bell pepper, about 7 minutes. Add the Hominy, Garbonzo beans, corn, diced tomatoes, tomatillos, chilies, vegetable stock and water. Add your seasonings , oregano, thyme, azafran,and cumin.

  3. 3.Add the red chile blended mixture, bay leaves, and vegetable broth. Bring temperature up to boiling drop temperature and continue cooking 30-45 minutes on simmer uncovered, adding more water if needed. The stew will thicken a bit upon cooking.
