A traditional mexican pork stew made with pork roast, dried California chiles, and hominy. Garnish with cilantro, cabbage, onion, and radish slices!

Recipe Ingredients for Pozole (Mexican pork stew)

3 lbs pork roast
15 Peppers, Hot Chile, Sun-dried
8 garlic cloves
1 large onion
32 oz hominy

Recipe Directions for Pozole (Mexican pork stew)

  1. Soak chiles in cold water for approximately 1 hour.

  2. Cut pork into large cubes; trim fat if desired. Put pork into large pot; cover with water, and bring to a simmer. Chop 1 large onion and 1 head of garlic and add to simmering pork.

  3. Remove chiles from water. Split them open, remove the veins and seeds, and place in blender with black pepper and oregano to taste. Blend into a paste; you may need to add water to keep the mixture thin enough to blend properly.

  4. Add chile puree and (well-rinsed) hominy to simmering pork. Reduce heat, cover, and simmer until pork is very tender and flavors marry.

  5. Garnish with chopped onion, cabbage, lime, radish, and cilantro. ¡Sabrosa!
