Makes 12 servings



1/2 cup Rolled Oat Flour (ground up rolled oats) 2 TB Ground Flax Seed (you can sub 2TB of Protein Powder, or any flour of choice) 4 Egg Whites 1/2 cup of Pumpkin Puree (or 1/2 cup of Unsweet AppleSauce) 1/2 Cup of Unsweet Coconut Milk 2 tsp Baking Powder Optional Add-Ins: 1 Cup of Frozen Spinach Cinnamon 1 Tsp Vanilla Stevia (to taste- or other form of sweetener) Berries(frozen or fresh), raisins, spices, etc... 12-15 SLICES

Recipe Ingredients for POWERCAKE (cinnamon blueberry)

0.5 cup Oat Flour
0.35 serving 365 soy protein powder (1scoop=140cal)
4 large Egg, White
4 oz Greek, Non-Fat, Plain Yogurt
4 fl oz Vanilla
2 tsp Baking Powder
1 tsp Cinnamon, Ground
1 packet Stevia
0.25 cup Blueberries

Recipe Directions for POWERCAKE (cinnamon blueberry)

  1. x all ingredients & bake at 350 Degrees for 25-30 Minutes

  2. *LET COOL in fridge before eating!!

  3. (Sometimes I stick mine into the freezer for a few minutes)

  4. OR

  5. You can subtract the Baking Powder

  6. And microwave for 10 minutes!!

  7. -It will be VERY hot when you take it out, FYI.

  8. *Remove from pie pan & cut into slices!

  9. Top with whatever toppings you would like!
