Recipe Ingredients for power oat muffins

1 banana (ripe)
1 tbsp unsweetened applesauce
1/4 cup liquid egg whites
1 tsp cinnamon
3 tbsp brown sugar (+1 packet truvia)
1/4 cup flax seed
1/4 cup whole wheat flour
1/2 cup oats
1/4 tsp baking soda
1/4 tsp baking powder
3 tbsp walnuts
3 T. raisins

Recipe Directions for power oat muffins

  1. 1. Preheat oven to 350 and grease 6 muffin tins. Mash banana into a medium sized bowl. add the apple sauce, egg whites, and sugar. ground the flax in a blender for a few min.

  2. In a separate bowl, stir together the dry ingredients (Oats, grinded flax, whole wheat flour, baking soda). Add dry ingredients into wet and stir. Do not overmix. Add nuts and raisins Spoon into muffin tins. Bake for 15-20 mins. makes 3 large power muffins.
