Recipe Ingredients for Power Muffins

1 1/4 c. soy flour
2/3 c. nonfat dry milk
2 tsp. baking powder
1/2 tsp. salt
1/4 c chopped pitted dates
1/2 c blueberries
1/2 c strawberries
1/4 c. chopped walnuts
1/8 c. sliced almonds
2 eggs, slightly beaten
1 tsp. grated orange peel
3/4 c. orange juice
2 tbsp. honey
2 tbsp. apple sauce

Recipe Directions for Power Muffins

  1. Preheat oven to 350 degrees.

  2. In mixing bowl stir soy flour, nonfat dry milk, baking powder, and salt together thoroughly.

  3. Stir in the fruits and nuts.

  4. Combine the eggs, grated orange peel, orange juice, honey, and apple sauce.

  5. Stir the egg mixture into the dry ingredients just until moistened.

  6. Grease muffin pan and fill (between 1/4 and 1/3 c per muffin).

  7. Bake at 350 degrees for 12-20 minutes, until a knife comes out clean.
