Recipe Ingredients for Poultry, Chicken and Cheese Enchiladas

10 3/4 ounce cream of chicken soup
1/2 cup sour cream
1 cup salsa
2 t chili powder
2 cups chicken, chopped
1/2 cup monterey jack cheese
6 flour tortillas
1 tomato, chopped
1 green onion, chopped

Recipe Directions for Poultry, Chicken and Cheese Enchiladas

  1. Stir the soup, sour cream, salsa,and chili powder in a medium bowl.

  2. Stir 1 cup of salsa mixture, chicken and cheese in a large bowl.

  3. Divide chicken mixture among tortillas. Roll up the tortillas and place seamside up in a 2 quart shallow baking dish. Pour remaining salsa mixture over filled tortillas. Cover baking dish.

  4. Bake at 350 for 40 minutes or until enchiladas are hot and bubbling. Top with tomato and onion.
