Recipe Ingredients for Potstickers

1 pound ground turkey
2 cups napa cabbage, chopped
1 teaspoon salt
1 cup scallions, chopped
2 tablespoons soy sauce
2 tablespoons sesame oil
1 tablespoon cider vinegar
1 1/2 teaspoons ginger, minced
1 1/2 teaspoons garlic, minced
5 cups flour
2 1/2 cups boiling water

Recipe Directions for Potstickers

  1. Wrappers:

  2. Combine flour and boiling water; knead until an elastic dough forms. Cover and let rest 25 minutes.

  3. Tear off a handful of dough, flour it lightly, and pass it through a pasta maker on the thickest setting. You can roll it out by hand if you don't have a pasta maker. Then, use a biscuit cutter to cut out three inch rounds. Gather up the excess trimmings, knead them back into the dough, and repeat until all dough is used up. You can layer the rounds between wax paper while you work.

  4. Filling:

  5. Place chopped cabbage in a strainer; sprinkle with salt and toss. Allow it to sit for 20-30 minutes. Then squeeze out the excess fluid.

  6. Combine turkey, cabbage, scallions, and all seasonings; stir to combine.

  7. Assembling the dumplings:

  8. Place 1.5 teaspoons of filling on each dough round. Fold the round in half and press the edges to seal. Then, turn the half-round upright and flatten the bottom - so that the seam is at the top. Pleat the seam into three pleats and curve the ends slightly.

  9. Cooking:

  10. Steam for 8-10 minutes, until the meat is completely cooked. One minute before the dumplings are done, heat up a non-stick frying pan with a little peanut or canola oil. Transfer dumplings to the frying pan and cook until the bottoms are crisp and golden-brown.
