Recipe Ingredients for Potatoes Persillade

2 lbs. red potatoes
3 cups green cabbage
3/4 tsp salt
1/8 tsp. black pepper
1 tbsp unsalted butter
1 tsp fresh thyme
2 tbsp. olive oil
2 garlic cloves
4 slices whole wheat bread
1/2 cup chopped parsley
1 tsp lemon zest

Recipe Directions for Potatoes Persillade

  1. boil potatoes until almost tender, boil cabbage 5 minutes

  2. drain add salt, pepper and thyme

  3. heat oil, add garlic and breadcrumbs.stir often 5-8 minutes. Stir in parsley and zest.

  4. serve potatoes and cabbage, sprinkle topping on top
