Recipe Ingredients for Potatoes Gratin

100 ml skim milk
1 tablespoon flour
1 tablespoons butter
4 oz Comte
530 grams potatoes
275 grams fennel
2 tablespoons heavy cream

Recipe Directions for Potatoes Gratin

  1. Steam the potatoes and fennel for 3-4 minuntes. You don't want to cook them, just get them started.

  2. Make a roux. Use 1 tablespoon butter and 1 tablespoon flour. Melt the butter and add in the flour, cooking for a minute or two while stiring. Add the milk and cook until it begins to thicken. Add 2 oz grated cheese and melt. Add salt and pepper to taste, and other herbs and spices as desired.

  3. In two gratin dishes or any oven safe dish, arrange the vegetables evenly and pour over half the white sauce. Add 1 tablespoon cream to each dish.

  4. Cover and bake at 180/350 for 30 minutes. Uncover and layer the rest of the cheese on top of the two dishes. Return to oven and under the broiler "gratin" the cheese until it melts and browns. Watch closely, because it won't take very long.

  5. Serve while hot.
