No really healthy, but yummy! Used what I had on hand for a last minute dinner with the neighbors... I am sure it could be made healthier!

Recipe Ingredients for Potatoes Au Gratin

6 yukon gold potatoes
1 onion
6 tbsp butter
6 tbsp flour
2 cups skim milk
5 cups cheddar cheese

Recipe Directions for Potatoes Au Gratin

  1. Pre-heat overn to 400 degrees

  2. Slice potatoes to 1/4 inch thick

  3. Slice onion into rings

  4. Spray baking dish with Pam-type spray

  5. Layer potatoes, then onions, then potatoes until all are used (ending with potatoes on top)

  6. Salt & Pepper to taste

  7. In a saucepan, melt butter

  8. Add flour, incorporate, stir and cook for 1 minute

  9. Add milk and stire until heated through

  10. Continue to heat and stir until thickened

  11. Add cheese and stir until completely melted and incorporated

  12. Pour over potato/onion layers

  13. Cover with aluminum foil

  14. Bake for 1 1/2 hours (remove foil for the last 20 minutes or so to brown the top)
