Healtier version of a potatoe salad as a side dish for meat products, sausages etc.

Recipe Ingredients for Potatoe Salad in light form from Olga's Healthy Choice

500 g potatoes
200 g Light Mayonnaise
200 g red onion
250 g green peas&carrots
100 g pickle
2 tbsp lemon juice
1 pinch salt
1 pinch pepper

Recipe Directions for Potatoe Salad in light form from Olga's Healthy Choice

  1. Wash the potatoes properly and boil them with skin. Let it cool, then cut in cubic pieces in 1.5 cm.

  2. Boil frozen pea & carrot mixture and let it cool.

  3. In a bowl, grind onion. Add sliced pickles and other ingredients. Mix them all properly.

  4. You may decorate with some fresh parsley leaves before serving.
