Recipe Ingredients for Potatoe Leek Soup

15 cups low sodium chicken broth
6 cups leeks, halved lengthwise and sliced in 1/4 inch pieces
13 medium potatoes
2 tbsp olive oil
1 tbsp salt

Recipe Directions for Potatoe Leek Soup

  1. Put 2 tbsp olive oil in large pot

  2. Add leeks and saute' til softened

  3. Add chicken broth and heat over medium

  4. Add diced potatoes and increase heat to medium high

  5. when potatoes are soft remove some to bowl and mash

  6. garnish with minced parsley
