Recipe Ingredients for Potatoe Fritatta

3 red potatoes
1 onion
3 eggs
4 tbsp flour
3 tbsp olive oil

Recipe Directions for Potatoe Fritatta

  1. cut potatoes in medium size cubes and boil lightly, drain

  2. place in mixing bowl

  3. add the onion (chopped) and eggs, mix

  4. add flour in small quantities until desired consistency is obtain

  5. lightly heat the oil in a skillet (25 cm in diameter)

  6. place mixture on skillet and give shape until eggs in the edges are cooking

  7. use medium to low heat and don't cover

  8. cook one side until it moves (does not stick to skillet) and flip over, cook the other side.

  9. serve with a green salad.
