Layers of golden potatoes, steamed chard and cheddar cheese.

Recipe Ingredients for Potatoe Chard Pie

7 potatoes - sliced very thin
1 bunch spinach ( I use Chard actually)
1 tsp cajun seasoning
8 oz cheddar cheese
1 tsp olive oil

Recipe Directions for Potatoe Chard Pie

  1. Wilt the chard by steaming it a couple of minutes.

  2. Grate the cheese.

  3. Thinly slice 7 golden potatoes, use a mandolin if available.

  4. Swirl the oil in the bottom of an iron skillet or baking dish.

  5. Spread out 1 or 2 chard leaves to cover the bottom of the pan. Then place a layer of potatoes slightly overlapped.

  6. Add some cheese but not too much - most goes on top.

  7. Sprinkle a little seasoning.

  8. Repeat layers ending with cheese.

  9. Bake 45 min to 1 hr at 350 F.
