Fried potatoes and zucchini that can be served as a side dish or with fried or scrambled eggs.

Recipe Ingredients for Potato and zucchini hash

2 medium potatoes, cubed
2 tablespoons light olive oil
1/2 medium onion, diced
1 tsp pepper
1 medium zucchini, diced

Recipe Directions for Potato and zucchini hash

  1. Heat the oil over medium high heat in a large skillet. Add potatoes and onions and cook until potatoes are browned and mostly done, about 15 minutes. Add the zucchini and season with salt and pepper to taste. Reduce heat to medium and cook until zucchini is tender, about 7 minutes longer.

  2. Serve with an egg of your choice (fried, scrambled, hard boiled) on top, if desired.
