Recipe Ingredients for Potato and Zucchini Frittata

9.9 oz Potatoes, Boiled, Cooked In Skin, Flesh
4 large egg Eggland's Best Egg
2 serving HEB egg white
0.13 cup Coriander Leaves
0.13 tbsp Picante Sauce
1 tbsp Olive Oil, Extra Virgin
1 clove Garlic
0.5 cup, chopped Onions
6 oz Squash, Summer, Zucchini, Includes Skin
1 oz La Vaquita Cheese
4 tbsp Bacon Bits

Recipe Directions for Potato and Zucchini Frittata

  1. Peel potato and cut into 1/2 " cubes

  2. Put potatoes in a pan with water

  3. Boil potatoes until tender 6-8 minutes

  4. Drain and pat dry

  5. Whisk eggs, egg whites, cilantro, salt and hot sauce in a large bowl

  6. Preheat the oven broiler to medium heat

  7. Heat oil in (10") skillet over medium high heat

  8. Add garlic and onion; cook until onion is translucent-2min.

  9. Zucchini grated, squeezed dry in clean paper towel

  10. Add zucchini and cook until tender, about 6 min.

  11. Add cooked potatoes and cook, stirring occasionally, until the potatoes begin to brown slightly,about 4 min. more

  12. Evenly pour the egg mixture over vegetable mixture.

  13. Cook, over medium heat, tilting the pan and lifting the edges with a rubber spatula to let the uncooked egg flow underneath.

  14. Sprinkle grated cheese and bacon

  15. Broil 5-7 inches from the heat, until the eggs puff and are just set and cheese is golden brown, about 5 min
